At Cut we are chefs first and butchers second. We are passionate about bringing you the best quality meats and seafood in the Vail Valley. We carry Colorado pasture raised beef, lamb and free range chickens the way that animals were intended to be raised. Seasonal Sustainable seafood is delivered 6 days a week. Our pantries are always stocked with gourmet cheeses, crackers, condiments, sauces, olives, charcuterie and more. You’ll find homemade delicious sausages, marinated meats ready for the grill, pasta and steaks cut to order.

Our amazing staff is here to assist with dinner ideas, cooking instructions, custom cuts, grinds and whatever it is you need..... just ask us!!!!!

We spend most of the day planning when we eat, where to eat, and what time to eat. Our most intimate and light-hearted conversations happen around the table eating delicious food.
